Choose your weapon: will it be a Gibson, that most elegant of the variations on the Martini, made here with Classic Dry or Bartender’s Cut, dry vermouth and pickled onion? Or will it be a straight-down-the-line classic, made with your choice of 3608 Nagambie Gins?
The good news is that either option is the perfect aperitif ahead of a great lunch in St Kilda. The team at Prince Dining Room are laying a spread of handsome plates including raw kingfish with smoked tomato and citrus, the intriguing octo-hummus, with blistered bread, and creamy stracciatella dressed with persimmon, cucumber and potato chips.
And then the main event: a scotch fillet of vintage beef, served with pine mushrooms, peppers and red wine sauce, with sides of Moroccan spiced carrots and buckwheat, and cauliflower with mint-tahini yoghurt and spiced nuts.
Dessert? Yes indeed. Make yours a vanilla parfait with chocolate mousse and strawberry jam the team makes in the wood-fired oven. And yes, there’s plenty of space for you to relax at the bar afterwards.
